POSITION SUMMARYThe F&B Operations Director Sag Harbor oversees the full food and beverage program across Zagara at Faraway Sag Harbor, Fortune Favors at Oyster Estate, and all pool and lobby F&B services. This role ensures the consistent delivery of CMH's hospitality standards through team excellence, service quality, and operational performance. Reporting to the Managing Director of New York, this leader bridges daily execution with strategic oversight to drive guest satisfaction, team development, and financial success across all Sag Harbor outlets.ABOUT ZAGARAWithin Faraway Sag Harbor, Zagara brings an Amalfi Coast-inspired spirit to the Hamptons, offering coastal Italian cuisine that balances sophistication with warmth. Zagara captures the essence of Sag Harbor dining "” elegant, expressive, and deeply connected to its coastal surroundings.KEY AREAS OF RESPONSIBILITYOperational and Service Excellence Lead and oversee all front-of-house and food and beverage operations across Sag Harbor, ensuring seamless execution, exceptional guest experience, and alignment with CMH standards.Financial Performance and Accountability Understand, execute, develop, and maintain strong financial practices, including labor and cost control, forecasting, and collaboration with property and culinary leadership to achieve sustainable profitability.Team Culture and Leadership Build and maintain a motivated, high-performing F&B team focused on professionalism, accountability, and a shared commitment to excellence in hospitality.PRIMARY RESPONSIBILITIESOperations and Service LeadershipOversee all F&B operations across Faraway Sag Harbor, Zagara at Faraway, Fortune Favors at Oyster Estate, and all pool and lobby F&B programming.Uphold Faraway's standard of genuine, detailed, and memorable service for both returning and new guests.Lead F&B Management, ensuring consistency in service delivery, product knowledge, and guest engagement.Partner with the Culinary Director to ensure strong collaboration between front and back of house teams.Maintain compliance with all health, safety, and alcohol service regulations.Team Development and CultureLead recruitment, onboarding, and development of F&B management teams across all outlets on both properties.Foster a culture of respect, professionalism, and collaboration that supports long-term retention and growth.Conduct regular team meetings, performance reviews, and coaching sessions to reinforce CMH's service and leadership values.Provide visible, hands-on leadership to inspire teams and reinforce a culture of hospitality.Financial and Operational OversightReview weekly and monthly P&L performance with the Managing Director to identify trends and areas for improvement.Establish systems for cost tracking, labor management, and expense control that align with CMH's operational goals.Partner with accounting and corporate teams to ensure accuracy and transparency in financial reporting.Ensure each outlet operates efficiently and profitably while maintaining guest experience at the highest standard.Collaboration and CommunicationMaintain strong communication with the SVP of F&B and the Culinary Director to align property operations with CMH initiatives and service philosophy.Serve as a central point of coordination for property leadership, facilitating alignment between operations, culinary, central, and brand teams.Act as a visible leader and ambassador within the Sag Harbor community, building relationships that strengthen the property's local connection and reputation.QUALIFICATIONSEight or more years of experience in food and beverage operations, preferably in multi-outlet or multi-property hospitality environments.Proven record of leading successful teams and building positive service cultures.Strong financial literacy with the ability to analyze P&L statements and implement strategies that improve performance.Administrative experience with payroll systems, POS operations, and familiarity with proper documentation and discipline procedures.Excellent leadership, organizational, and communication skills with an ability to manage through influence.Knowledge of service standards, sequence of service, and F&B best practices within boutique hotel or lifestyle mitment to CMH's values of authenticity, creativity, and genuine hospitality.ABOUT COLLARED MARTIN HOSPITALITYEstablished in January 2025, Collared Martin Hospitality operates the Faraway brand, along with a collection of independent lifestyle & luxury boutique hotels, restaurants, and cocktail clubs.
