Join our team of seasoned professionals and become a part of the fabric of the New York food scene.Role and ResponsibilitiesThe BOH Associatewill play a key role being responsible for preparing, cooking, organizing, and maintaining the food and supplies that our customers see and enjoy on the floor - from our hot bar and salad bar to our soups, coffee, and baked goods. Key Responsibilities:Food Preparation & CookingBake baguettes and bread daily.Bag, label, and display bread in the morning.Prepare, marinate, and cook raw chicken to recipe specifications.Slice, bag, and price cold cuts.Heat soups and maintain soup bar presentation and freshness throughout the day.Follow and cook breakfast and lunch recipes for the Hot Bar.Check hot bar food quality every 15 minutes, ensuring freshness and compliance with Citarella standards.Salad Bar / Hot BarOpen and close Salad Bar, Soup Bar, and Hot Bar following detailed planograms.Maintain bar supplies, restock and rotate food items regularly.Cook breakfast and lunch items according to recipe standards.Clean and maintain kitchen equipment to meet Department of Health standards.Prep, rotate, date, and label all ingredients.Ensure all food temperatures are monitored and documented correctly.Cut, cook, and replenish salad bar products as needed throughout the day.Take accurate inventory and place supply orders per department schedule.Clean, wash, and sanitize all bar containers and utensils regularly.Receiving & StorageReceive and verify deliveries to ensure accuracy and anize and label backstock with proper product names and expiration dates.Maintain all required temperature logs, receiving logs, and production logs accurately.Dishwashing & SanitationWash and sanitize kitchen tools, utensils, and containers throughout the day.Maintain cleanliness and sanitation of kitchen equipment and workstations in accordance with Department of Health regulations.Follow proper food safety and handling procedures.Customer Service & Floor SupportGreet and assist customers when working on the sales floor.Help customers with questions, requests, or shopping bags when needed.Represent Citarella's commitment to excellent customer service at all times.Qualifications and Education Requirements1+ year of kitchen, prep cook, or line cook experience preferred.Ability to work in a fast-paced, team-oriented environment.Knowledge of basic food safety and sanitation fortable using kitchen tools, ovens, slicers, and food prep equipment.Ability to lift up to 50 lbs and stand for extended periods.Flexible schedule Monday to SundayMust adhere to Citarella's uniform and grooming standards.Preferred SkillsPrecision in food preparation, labeling, dating, and following recipes accurately.Ability to multitask and prioritize tasks during high-volume periods without compromising quality.Strong interpersonal skills and ability to work collaboratively with BOH and FOH team fortable shifting between different BOH stations - from salad bar to hot bar, dishwashing, or baking - depending on daily needs.Dependable, punctual, and committed to maintaining Citarella's standards of quality, cleanliness, and excellence.Bilingual Spanish-English is a plus
