Job Summary: The Assistant Food Service Manager reports to the Food Manager and assists with overseeing the daily operations of the kitchen within the facility. This role ensures meals are prepared according to nutritional guidelines, food safety standards, and facility regulations, while supervising and directing all workers. The Assistant Food Service Manager maintains order and discipline, ensures proper training of inmate workers, and supports rehabilitation through structured culinary work experience. Essential Duties & Responsibilities:Train and supervise inmate/detainee workers, including orientation, task assignments, sanitation, safety, and security procedures. Instruct and assist with food preparation and service in accordance with standardized recipes, production standards, and dietary requirements. Enforce housekeeping, sanitation, safety, health code, and security protocols; conduct regular kitchen and equipment inspections. Receive, inspect, and properly store food and supply deliveries, ensuring accuracy, proper temperatures, and timely stocking. Monitor and maintain food and supply inventory, complete weekly inventories, order supplies, and control costs and waste. Maintain accurate records of food production, temperature logs, cleaning schedules, and inmate/detainee labor. Coordinate menu planning and annual reviews with a registered dietitian and support annual food service health inspections. Required Knowledge Skills/Abilities: Excellent verbal and written communication skills. Excellent interpersonal and customer service skills. Excellent organizational skills and attention to detail. Excellent time management skills with a proven ability to meet deadlines. Ability to function well in a high-paced and at times stressful environment. Proficient with Microsoft Office Suite or related software. Working knowledge of bookkeeping practices and business English with good grammatical and spelling, skills, and ability to develop correspondence, reports and operational directives. Education and Experience:Graduation from an accredited senior high school or equivalent or GED. Successful completion of training courses and on-the-job training as required by facility training standards. Wage-earning experience in correctional, commercial, or institutional food preparation or food service management or eighteen months of correctional custody or law enforcement experience. Correctional or institutional food service experience preferred. Correctional custody or law enforcement experience preferred. Experience in the supervision of employees or offenders preferred.
