The Executive Chef position will be a hands-on Executive Chef for The Rooftop at the Envio (one of Portsmouth s premier dining and drinking spots), 9000 square feet of gorgeous event space between The Envio and The Venue at Portwalk Place as well as the AC Hotel. It is a big job that is not for everyone but for a highly motivated and talented chef, it is a fantastic opportunity. With our continued growth and project pipeline, we are able to provide our associates with exciting career advancement growth and opportunities.General Responsibilities:Ensure an exceptional culinary experience for every guest while maximizing department profitabilityOversee of all culinary operations including food production, kitchen safety and sanitation, scheduling, training, ordering and menu creationWork closely with sales teams and hotel general managers at assigned hotelsRecruit, interview and hire culinary associates for assigned propertyTrain and support all culinary associates and ensure performance in accordance with established hotel brand and Colwen standardsConduct performance management reviews and follow upsCreate and implement new menus and individual menu items based on current food trends, venue concept and regional tastesDevelop innovative menu selections for special events and functions in accordance with client dietary and budgetary considerations and expectationsDocument recipes and train the team on new recipe itemsCoordinate, plan, participate and supervise the production, preparation and presentation of food for restaurants, events and lounge areasEnsure a clean, safe and sanitary kitchen in compliance with all local, state, OSHA and federal food safety standardsLead by example to include working hands on with the team when neededEnsure that all required associates have current ServSafe certificationManage food storage rooms and walk ins/refrigeration to maintain high quality product and to ensure food safety standardsCalculate and manage food costs within budget by reacting quickly to shifts in the supply chainEnsure proper production based on forecast and banquet event ordersFollow proper ordering procedures based on business demandsManage schedule to ensure labor costs meet /exceed budgetEnsure food deliveries are checked for product quality and quantityPerform other duties as assignedRequirements:Able to understand financial goals and accomplish them5 years of F&B experience (hotel experience preferred)Excellent written and verbal communication skillsProven track record in social and corporate cateringStrong knowledge of HACCP procedures and applicationKnowledge and prior experience with outside vendors and associated ordering systemsStrong team leaderStrong presentation skillsIntermediate to advanced computer skillsAbility to learn computer systems and operate POS systemWillingness to work a rotational work schedule including nights, weekends, and holidaysWe ve got you covered: Benefits & PerksMedical Insurance with Company-Funded HRADental InsuranceVision InsuranceFlexible Spending AccountsWide-Array of Supplemental Insurance OfferingsPaid Time Off ProgramsEmployee Assistance Program401K Plan Traditional & Roth Options with Employer MatchHotel Discount Travel Program for Associates & FamilyExclusive Associate Discounts Travel, Entertainment, & RetailTraining and Development ProgramsCareer Advancement OpportunitiesColwen Hotels is an equal opportunity employer.
