Job Summary Assists the Executive Chef in the daily operations of the kitchen, including menu development, inventory and purchasing of supplies, and cost control. Oversees the activities of the kitchen staff and monitors food production and presentation in the absence of the Executive Chef. Primary Responsibilities The requirements listed below are representative of the knowledge, skill, and/or ability required. These duties and responsibilities will be rated on the Annual Performance Review. + Oversee the bakery department including menu development, inventory and purchasing of supplies, and cost control. Keep kitchen, dishes, and storage areas clean and organized. + Direct the preparation, production, and food quality in accordance with HACCP procedures. + Manage food cost control within established food requirements and ensure sufficient quantity of food is served to meet the contract. + Assist in pastry recipes and report nutritional information that supports diverse dietary nee + Monitor the performance of a staff of 3 to ensure adherence to all service standards and productivity standards to ensure exceptional guest satisfaction. Recruit, train, and follow progressive discipline with all staff and new hires. + Verifies that kitchen staff follows all recipes and portions servings correctly. Additional Duties + Assist in hiring and training employees according to company standards. + Sets excellent customer service and work examples. + Manages staffing levels throughout shift. Oversees kitchen labor and food cost to budgetary requirements. + Perform additional related responsibilities as directed by management. Qualifications: Education, Experience and Certification(s) + HS diploma or GED required. College or culinary training or extensive cooking and production experience recommend. + Three to five years progressive professional cooking experience. + A minimum of two years working in management. Culinary experience in a hotel or banquet hall preferred. + ServSafe (Renew every 5 Years) certification required. Knowledge, Skills and Abilities + Ability to organize multiple projects; manage and prioritize multiple tasks and meet deadlines. + Strong interest in training and coaching Ability to fill-in for any kitchen position. + Demonstrated leadership ability. + Computer literacy: MS Word and Excel. + Ability to work well under pressure. + Commitment to quality service, and food and beverage knowledge. Basic math skills. + Understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives, and dish machine. + Professional communication skills, oral and written. Ability to work in a high-energy and demanding environment. + Organization and leadership skills. + Demonstrates strong leadership skills and is a team player. Can effectively solve problems.
